I started with a bag of microwave popcorn but in any case you will need about 14cups of popped corn.
And then the best part the Caramel. Yummmmm!
125g butter, chopped
3/4 cup white sugar
2 tablespoons honey
1 cup pecans, roughly chopped
1. You'll need to prepare a lined tray for the popcorn to cool on.
2. Place butter, sugar and honey into a saucepan over medium heat. Cook, stirring, for 5 to 7 minutes or until sugar has dissolved. Bring mixture to the boil. Boil, uncovered, without stirring, for 5 to 8 minutes or until light golden.
3. Add the chopped nuts to the caramel and then pour the entire mixture over the popcorn. Make sure not to get any caramel on your finger cause it hurts... youch! Mix well then pour out onto you prepared tray.
And that's it. Let it cool completely and then you can eat.
This recipe is fool proof, trust me. If it's completely cooled and you feel it's not hard caramel but slightly chewy just stick it into a hot oven for a couple of minutes and let cool again. And if you don't have pecans (which I didn't) you can use peanuts. Next time I'll be trying it with out the honey and using brown sugar. It's entirely up to your taste.
